Chicken Karaage

INGREDIENTS

  • Chicken thigh or breast

  • 2 tbsp soy sauce*

  • 2 tbsp Japanese cooking sake*

  • 3 cloves garlic, minced

  • 2 tsp ginger, minced

  • 1 egg yolk

  • 3 tbsp corn starch

  • Olive oil or tallow to shallow fry; alternatively use an air fryer

INSTRUCTIONS

  1. Cut chicken chunks or into strips if using for sushi

  2. Marinate the chicken with soy sauce, sake, garlic and ginger. Give this a good mix to combine all the ingredients and set aside. I leave this in the fridge for a few hours. I either prep this during the day or at the start of my dinner preps.

  3. Once chicken has finished marinating, prep your air fryer to 180°C or prepare oil in a pot.

  4. Add in 1 egg yolk and corn starch and mix well by hand or put into a container and give it a good shake. Add more corn starch for a thicker coating and adjust as needed.

  5. Rub a little olive oil to the base of air fryer and chuck the chicken in and cook for 10 minutes. Flip chicken after the first 10 minutes and cook for another 8-10 minutes or until golden brown.

  6. Serve with some lemon and mayo. Have as an entree or make it into sushi, enjoy!
